The majority of available high end whey products (isolates, ion exchange and hydrolyzed) are denatured by-products of cheese manufacture. The biological integrity of the whey proteins is compromised as the milk is heated (163° F), and further subjected to chemical processing to manufacture cheese that damages/ denatures the whey proteins. The remaining filtrate is comprised of a narrow range of proteins that have survived the cheese manufacturing. Also removed are vital protein bound fats, while the protein then undergoes a final low heat processing which allows it to be referred to as undenatured/ cold process (although it was denatured in prior steps).
